Guess what guys?! It's SUNNY out! Up in our area, this is a rarity and must be celebrated with utmost importance! Of course the temperature is still only 10, but compared to what it has been, I'll take the double digits. :)
So, I'm new at this whole blogging thing, so I totally forgot to take pictures today until I got home, but anywho... for breakfast I had scrambled egg whites with 2 pieces of Ezekiel Sesame Bread spread with some homemade raspberry jam. For a morning snack, I had a homemade Cinnamon Soy Latte (1c. soy milk with 1c. coffee plus a shake of cinnamon). Lunch was a Kale Salad with Olive Oil and lactose free cottage cheese with organic blueberries. Currently I am munching on this.... Homemade Chocolate Protein Bars (and green tea with a smidge of honey)! :)

The recipe for these protein bars comes from the P90X Beachbody Forums:
-1c. protein powder (I used Now Pea Protein)
-1/2 c. rolled oats
-2T Peanut Butter
-1T Honey
-~1/2 T coconut sugar (to taste)
-1T cocoa powder
-~3/4 c. water (or until the mix starts to stick together)
Directions: Combine all the ingredients and press into a 8x8 baking dish and refrigerate. Cut into 6 bars once it firms up a bit. :)
